Lemon Raspberry Chia Pudding

The lemon and raspberry give this creamy chia seed pudding a bright and lovely flavor.
- 3 Tbsp Chia seeds
- 2/3 cup Almond or Coconut Milk
- Zest of 1 lemon
- 1/4 cup Fresh raspberries
- Sweetener optional
- Coconut Flakes optional
Mix well, cover, and place in the fridge for at least an hour.
When ready to serve, mix, and top with raspberries, lemon and shredded coconut. Enjoy!
